Like the breads in this book,
these rolls are fabulous. Try one, try them all! Most of these rolls are moist and soft. The hamburger rolls are a little less moist, just as they should be. If you would like a crisp crust on any of these rolls, pop them in a toaster oven (or traditional oven) for a few minutes.
Best of all, you can be confident in making a sandwich for your lunch! These gluten-free rolls stay perfect and do not crumble.
Hamburger Roll
(brown rice flour) MAKES 1 ROLL
A mild-tasting hamburger roll. I’d love to be more descriptive,
but it is just what you’re looking to put a burger on.
1 egg
½ tablespoon canola oil
1 tablespoon applesauce
teaspoon salt
2 tablespoons brown rice flour
½ teaspoon baking powder
½ teaspoon sugar
Baked in:
2-cup ramekin or other straight-sided microwave-safe bowl
1. In small bowl or cup, briefly beat egg until almost uniform in color.
2. Add remaining ingredients and mix well to combine.
3. Spray 2-cup ramekin with nonstick cooking spray.
4. Pour batter into ramekin and tap base to level batter.
5. Microwave on high for 2 minutes. Roll will rise and then settle.
6. Gently remove from dish and cool.
Hamburger Roll
(cornstarch and cornmeal) MAKES 1 ROLL
This is a straightforward hamburger roll. The taste and texture are pretty
amazing. If you’re wondering which roll to make for a burger, make this one!

1 tablespoon cornstarch
1 tablespoon cornmeal
½ teaspoon baking powder
½ teaspoon sugar
Baked in:

¼ teaspoon sugar
