A spicy side in no time. Heat a 16-ounce bag of frozen corn in one teaspoon oil for 5 to 10 minutes. Stir in a 7-oz. jar of roasted red chiles, finely diced and one teaspoon each of cumin, chili powder, finely diced serrano chile and salt to taste. Heat through for 5 minutes…olé!
2 c. all-purpose flour
1/4 t. baking soda
1 t. baking powder
3/4 t. salt
2/3 c. butter, melted
2 c. brown sugar, packed
2 eggs, beaten
2 t. vanilla extract
1 c. mini milk chocolate chips
3/4 c. chopped walnuts
Combine flour, baking soda, baking powder and salt in a large mixing bowl; set aside. In a separate bowl, blend butter and brown sugar together; mix in eggs and vanilla. Add flour mixture, stirring to blend. Spread batter into a lightly greased 13”x9” baking pan. Sprinkle with chocolate chips and nuts. Bake at 350 degrees for 30 minutes; cool in pan and cut into bars. Makes 12 to 15 bars.

5 apples, cored, peeled and sliced
1 t. cinnamon
1 c. plus 1 T. sugar, divided
3/4 c. margarine, melted
1 c. all-purpose flour
1 egg, beaten
Place apples in a greased 2-quart casserole dish; sprinkle with cinnamon and one tablespoon sugar. Mix remaining ingredients; spread over apples. Bake at 350 degrees for 50 to 60 minutes. Serves 6 to 8.
An easy way to core apples and peaches…slice fruit in half
and then use a melon baller to scoop out the core.
