INGREDIENTS

1 cup black Niçoise or Greek olives, pitted

½ cup walnuts, ground

1 clove garlic, crushed

3 tablespoons capers

1 tablespoon flax oil or extra-virgin olive oil

2 teaspoons lemon juice

½ teaspoon crushed oregano

¼ teaspoon ground thyme

¼ teaspoon ground basil

DIRECTIONS

Combine all of the ingredients in a food processor and pulse, removing the lid several times to scrape the sides with a spatula. The mixture should be smooth, but not totally puréed.

INGREDIENTS

2 tomatoes, skinned, seeds removed, and chopped into ¼-inch chunks

1 red onion, peeled and chopped into ¼-inch chunks

1 red pepper, seeds removed and chopped into ¼-inch chunks

1 lime, juiced

1 clove of garlic, finely chopped

2 stalks of celery, finely chopped

DIRECTIONS

Place the tomato chunks between several sheets of paper towel and press tightly. Squeeze the juice out of them.

Mix the chopped tomatoes, onions, and pepper in a bowl. Squeeze the lime juice over the top and add the garlic and celery. Add sea salt if desired, but it is a good idea to taste it first.

Mix everything together well, cover, and let marinate a few hours before serving.

INGREDIENTS

1 cup pine nuts (or ½ cup pine nuts, ½ cup soaked almonds)

1 large red bell pepper, cut in large pieces

1 tablespoon miso

1 clove garlic

1 teaspoon Krystal Salt brine or ¼ teaspoon salt

pinch cayenne (optional)

water to blend to desired consistency

DIRECTIONS

Blend all in blender to smooth consistency.

INGREDIENTS

1 cup raw macadamia nuts

2 tablespoons ground flax seeds

3 heaping cups of pumpkin, chopped in large chunks

1 cup celery cut in chunks

½ cup onion cut in chunks

2 tablespoons fresh basil (handful)

1 tablespoon fresh oregano (half handful)

1 ½ teaspoons dulse or Celtic sea salt

½ cup honey or to taste

DIRECTIONS

Grind the nuts in a food processor until fine, add all other ingredients and process. Use this stuffing in nori rolls and serve with cranberry sauce.

INGREDIENTS

4 bunches cilantro

4 jalapeño peppers

1 to 1 ½ teaspoons Celtic sea salt

3 tablespoons olive oil

DIRECTIONS

Process the cilantro, jalapeños and sea salt in a food processor using the “S” blade. Gradually add the olive oil. Use as a condiment.
