Place all the ingredients in the pan according to the order in the manufacturer’s instructions. Set crust on medium and program for the Basic cycle; press Start. (This recipe may be made using the Delay Timer.)

When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.

One-Pound Loaves

The recipes in this book are designed for 1

- and 2-pound-loaf bread machines. But all machines have the capacity to make smaller 1-pound loaves as well. The 1-pound size is also known as a sampler loaf, and is perfect for one or two people, especially if you like to make fresh bread every day. Here are a few basic recipes created to make some special 1-pound loaves. You’ll find recipes for plain white and egg breads, as well as a couple whole-grain loaves and a sweet bread. Of course, to make a 1-pound loaf from any of the other recipes in this book, all you have to do is cut the measurements for the 2-pound loaf in half.

SAMPLER BRIOCHE EGG LOAF

Place all the ingredients in the pan according to the order in the manufacturer’s instructions. Set crust on medium and program for the Basic cycle; press Start. (This recipe is not suitable for use with the Delay Timer.) The dough ball will be soft.

When the baking cycle ends, immediately remove the bread from the pan and place it on a rack. Let cool to room temperature before slicing.
