Eating at home and cooking great meals is one of the joys of life. One day, after picking a zucchini, two green tomatoes, and one heirloom tomato, I made this fantastic frittata!

3 tablespoons extra virgin olive oil

1 onion, chopped

1 zucchini, grated

6 fresh basil leaves, chopped

1 bunch fresh tarragon, chopped

3 sprigs fresh thyme, stems removed

4 eggs, lightly beaten

Sea salt and freshly ground black pepper

½ cup freshly grated Parmesan cheese

3 tomatoes (preferably a mix of green and heirloom), chopped

Preheat the oven to 350 degrees.

Heat a large oven-safe sauté pan on medium high. Add the olive oil and the onion; sauté for about 10 minutes, until browned. Add the zucchini and sauté until brightly colored and tender, about 3 minutes. Add the fresh herbs and the beaten eggs. Season with sea salt and pepper. Leave on the stovetop for 3 minutes to set. Do not stir. Remove from heat and sprinkle with Parmesan cheese. Place in the oven for 10 to 12 minutes, or until center is just set. Slice and serve warm with a side of chopped tomatoes that have been drizzled with olive oil, sea salt, and pepper.

SPICY FRIED EGGS WITH BASIL AND CRISPY ONIONS

As soon as I told my son, Bruce, about the benefits of turmeric, he invented this spicy treat for the morning. He uses a heavy sprinkle of turmeric and cayenne on his fried eggs. It gives a nice antioxidant boost, and your taste buds will say, “Good morning!”

2 large onions

4 tablespoons olive oil

4 large eggs

Sea salt and freshly ground pepper

4 fresh basil leaves, thinly sliced

To make crispy onions, peel the skin off the onions and slice them as thinly as possible with a sharp knife. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. When the oil is hot, add the sliced onions. Let them cook until they are brown and crispy, about 10 minutes. Season with salt and pepper. Scrape up the onions with a spatula and divide between two plates.

To fry the eggs, add the remaining 3 tablespoons of olive oil to the same skillet and heat over medium-high. When the oil is nice and hot, crack 2 eggs into the skillet. Sprinkle with salt, pepper, turmeric, cayenne, and paprika. Cook until the whites start to brown on the edges. Cover the
skillet with a lid and cook for 1 minute longer. When you lift the lid, the whites will be cooked all the way through and the yolks will be slightly runny. If you prefer them more cooked, leave the lid on longer. Lift the eggs out with a spatula and place onto the plated onions. Repeat with the other 2 eggs. Top with fresh basil and serve.

PEACH RASPBERRY FRUIT SMOOTHIE

I love starting my mornings with a fruit smoothie! For an icy frozen treat, use frozen fruit or add a handful of ice.

2 cups frozen peaches

1 cup frozen raspberries

¾ cup guava juice

Place the fruit and juice into a blender and process until smooth. Adjust the amount of juice to create the consistency you prefer.

TROPICAL FRUIT SMOOTHIE

A taste of the islands … delicious! There is a brand of juice called Ceres that has a line of exotic flavors and no added sugars. Of course, you may use any brand, just watch for added sugar. Use fresh or frozen fruit; I have specified frozen only because these exotic fruits can be hard to find in some areas.

2 cups frozen mango

1 cup frozen pineapple

¾ cup passion fruit juice

Place the fruit and juice into a blender and process until smooth. Adjust the amount of juice to create the consistency you prefer.

BERRY POWER SMOOTHIE

Packed with antioxidants, these berries start your day off right! Either fresh or frozen work well.

1 cup frozen blueberries

1 cup frozen raspberries

1 cup frozen blackberries

¾ cup cherry juice

Place the fruit and juice into a blender and process until smooth. Adjust the amount of juice to create the consistency you prefer.
