While writing this book, I likened the process to shoveling a six-foot snow bank with a teaspoon. Anyone who lives in Minnesota can identify with this. We have overdosed on casseroles, and more than one got buried in my walk-in cooler a bit too long. I started freezing them, and when the freezer filled up, I was grateful for friends who offered to help me retrieve the space.

I want to thank especially my husband, Dick, who was my ready tester, taster, and sometimes dishwasher, and who calls himself not just a “clean plate clubber,” but also a “clean casserole clubber.” Thanks also go to many friends and family members who contributed recipes and helped test and eat these recipes. I am, because of them, most blessed.
