Unusual Stuffed Peppers

Ingredients

  • 3 lb. pork roast,
  • 5 bell peppers,
  • 1 cup chicken broth,
  • ½ cup tomato sauce,
  • 1 tbsp. oregano,
  • some bay leaves,
  • 1 tbsp. olive oil
  • salt and pepper to taste

Let’s Cook:

  1. Coat the slow cooker with olive oil.
  2. Add the pork roast and all the other ingredients, mix carefully.
  3. Cover and cook on low for about 6 hours.
  4. Cut the peppers in halves (vertical ones).
  5. Fill each half with the chicken mixture. It can be served as a starter or even as a snack.

Ingredients

  • 2 lb. oxtails,
  • 2 cups beef stock,
  • 2 garlic cloves,
  • 1 large onion,
  • 1 larger carrot,
  • 1 bell pepper,
  • 1 or 2 tbsp. oil,
  • ¼ cup tomato sauce,
  • ½ tbsp. red pepper powder,
  • ½ tbsp. fish sauce,
  • salt and pepper to taste

Let’s Cook:

  1. Dice and chop the vegetables.
  2. In a preheated skillet, brown the oxtails for about 30 sec on each side.
  3. Use the same skillet (after having removed the oxtails) to sauté the vegetables.
  4. Add the rest of the ingredients in the skillet and mix for about 5 min. Mix thoroughly.
  5. Place everything in a slow cooker, cover, and cook for 5 hours.

Ingredients

  • 2 lb. beef,
  • 6 large mushrooms,
  • 2 garlic cloves,
  • 1 cup water,
  • 2 tbsp. mustard,
  • 1 tbsp. vinegar,
  • basil,
  • salt,
  • black pepper,
  • rosemary,
  • oregano

Let’s Cook:

  1. Combine the spices and coat carefully the meat.
  2. In a preheated skillet, sear the beef roast on each side until it turns brown (about 5 min on each side).
  3. Move the meat in the slow cooker, cover it with wine and water and cook on low for 6 hours.
  4. Prepare the mushrooms by drizzling them with a mixture of oil and seasoning; roast them for about 7 min each.
  5. When ready, prepare the sandwich by placing the meat pieces in the middle between two mushrooms. Top with cheese if you like it.

  3. Cover and cook on low for 5 hours.
  4. When ready, remove the lid and add the rest of the cheese on top. Put back the lid and let the cheese melt before serving.
