2 tablespoons red wine vinegar
1 garlic clove, pressed
2 teaspoons whole-grain mustard
1 teaspoon dried dill weed
1 teaspoon dried thyme
Sea salt and freshly ground black pepper
6 tablespoons extra virgin olive oil
In a small bowl, whisk together all the ingredients except the olive oil. Add the oil in a slow stream, whisking constantly until the oil is emulsified. For a tangier dressing, add more vinegar.
Store in an airtight container in the refrigerator for 2 to 3 weeks.

lemon tarragon vinaigrette

½ cup tarragon vinegar
½ teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano
1 teaspoon fresh lemon juice
½ teaspoon grated lemon zest
1⁄3 cup extra virgin olive oil
¼ teaspoon sea salt
1⁄8 teaspoon freshly ground black pepper
In a small bowl, whisk together the vinegar, herbs, lemon juice, zest, and salt and pepper. Add the olive oil in a slow stream, whisking constantly until the oil is emulsified. Adjust the seasonings.
Store in an airtight container in the refrigerator for 2 to 3 weeks.

½ cup extra virgin olive oil
1 teaspoon hot pepper oil
Place the salt, pepper, mustard, and vinegar in a small bowl and whisk to combine. Add the olive oil in a slow, steady stream, whisking constantly until the oil is emulsified. Add the hot pepper oil while continuing to whisk. Adjust seasonings to taste.
Store in an airtight container in the refrigerator for 2 to 3 weeks.
