2 tablespoons balsamic vinegar
Sea salt and freshly ground black pepper
6 tablespoons extra virgin olive oil
6 ounces blue cheese (preferably Roquefort), crumbled

Place the vinegar in a small bowl and whisk in salt and pepper to taste. Add the olive oil in a slow stream, constantly whisking until the oil is emulsified. Add the blue cheese to the vinaigrette and stir until combined.

Store in an airtight container in the refrigerator for up to 1 week.

MAKES ABOUT ¾ CUPS

¾ cup sour cream
2 tablespoons red wine vinegar
4 ounces blue cheese (preferably Maytag or Roquefort), crumbled
Sea salt and freshly ground black pepper

Combine all the ingredients in a bowl, mashing the cheese with a fork until well combined. If the dressing is too thick, add a little more vinegar.

Store in an airtight container in the refrigerator for up to 1 week.

MAKES ABOUT 1½ CUPS

green goddess dressing

HEALTHY FATS, VEGETABLES
DETOX, LEVEL 1, LEVEL 2

4 scallions, white and green parts, thinly sliced
1½ cups mayonnaise
Juice from 2 limes (about ¼ cup)

Trim the ends off the scallions. Roughly chop the white and green parts and place in a food processor or blender. Chop until coarsely ground. Add the mayonnaise and lime juice, and puree until smooth.

Store in an airtight container in the refrigerator for up to 1 week.

MAKES ABOUT 1½ CUPS

pink goddess salad dressing

PROTEIN, HEALTHY FATS
DETOX, LEVEL 1, LEVEL 2

1⁄3 cup red wine vinegar
2 teaspoons fresh lemon juice
3 tablespoons mayonnaise
1½ teaspoons All Natural SomerSweet
2/3 cup extra virgin olive oil
¼ teaspoon sea salt
1⁄8 teaspoon freshly ground black pepper

Combine the vinegar, lemon juice, mayonnaise, and All Natural SomerSweet in a small bowl. Drizzle in the olive oil, whisking constantly, until mixture is creamy. Add the salt and pepper.

Store in an airtight container in the refrigerator for up to 1 week. 

MAKES 1¼ CUPS

FOR LEVEL 2
  For a Level 2 dressing, omit the red wine vinegar and mayonnaise, and use one 5-ounce container of fresh raspberries. Place all the ingredients in a food processor or blender and pulse until smooth.
