2 heads radicchio
¼ cup olive oil
2 tablespoons balsamic vinegar
Sea salt and freshly ground black pepper

Heat the grill to medium high.

Slice the radicchio in half lengthwise. Rinse and pat it dry. Combine the olive oil, balsamic vinegar, and salt and pepper in a bowl. Rub the oil mixture over the halved radicchio pieces.

Place the pieces on a hot grill and cook for 3 to 5 minutes on each side. The radicchio is done when warmed with a few char marks but still has a little crunch. Serve immediately.

SERVES 4

sautéed spinach with garlic, lemon, and oil

HEALTHY FATS, VEGETABLES

2 tablespoons sea salt
2 pounds fresh spinach, rinsed and large stems removed
2 tablespoons olive oil
4 garlic cloves, thinly sliced
Freshly ground black pepper
Juice from 1 lemon

Bring a large pot of water to a boil over high heat. Add the salt and the spinach, stirring until the spinach is just wilted, about 2 minutes. Drain the spinach and rinse thoroughly with cold water. Drain well, pressing as much liquid out of the spinach as possible.

Transfer the spinach to a chopping block and coarsely chop. Heat a large skillet over medium heat, then add the olive oil and garlic. Sauté the garlic for 1 to 2 minutes, until golden. Add the spinach and gently toss with the garlic until heated through, 2 to 3 minutes more. Season with salt, pepper, and the lemon juice. Serve immediately.

spaghetti squash

HEALTHY FATS, VEGETABLES

1 medium spaghetti squash
3 tablespoons unsalted butter
Sea salt and freshly ground black pepper

Preheat the oven to 350°F.

Slice the squash in half lengthwise. Place the halves on an oiled baking sheet, cut side down. Bake for 40 to 60 minutes or until a fork easily pierces the flesh. When cooked, scoop out the flesh into a bowl and discard the skin. Separate the flesh into strands. Toss with the butter, salt, and pepper to taste.
