6 large yellow or sweet (Vidalia or Maui) onions
Sea salt and freshly ground black pepper
2 cups
Mushroom Sausage Stuffing
1 cup chicken broth, preferably
homemade
2 tablespoons freshly grated Parmesan cheese
1 teaspoon fresh thyme leaves, or 1 teaspoon dried
1 tablespoon chopped fresh tarragon, or 1 teaspoon dried
Extra virgin olive oil, for drizzling

Preheat the oven to 350°F.

Peel each onion, then cut off the top quarter and scoop out the center until hollow. (Reserve the insides to sauté for stuffing or other use.) Season the onions inside and out with salt and pepper. Fill with the stuffing and place in a shallow baking dish. Pour the chicken broth around the onions. Sprinkle the Parmesan cheese, thyme, and tarragon on the onions and drizzle a little olive oil on top. Bake for 30 minutes, or until tender and broth has reduced by half. Spoon the reduced broth over the onions and serve.

fast and easy onion rings

PROTEIN, HEALTHY FATS, VEGETABLES

4 large onions
Grapeseed or coconut oil, for deep-frying
5 large eggs
Sea salt

Peel the onions. Cut onions into ½-inch-thick slices horizontally. Separate slices into rings. Using paper towels, pat onion rings dry. This helps the egg to stick.

Heat oil to 375°F in a deep fryer or a large, deep pot.

Place the eggs in a large bowl. Beat the eggs with a fork until blended. Dip the onion rings in the egg mixture. Drop the onion rings into the hot oil. Cook for about 2 minutes, or until golden brown. Blot on paper towels. Sprinkle liberally with salt.

garlic sugar snap peas

HEALTHY FATS, VEGETABLES
DETOX, LEVEL 1, LEVEL 2

1 pound sugar snap peas
3 tablespoons olive oil
5 garlic cloves, minced
Juice of ½ lemon
Sea salt and white pepper

Wash and trim the snap peas. Place a sauté pan on medium-high heat. When hot, add the oil and the garlic, and sauté for 1 minute. Add the snap peas and sauté until bright green and tender, about 3 minutes. Squeeze the lemon juice over the snap peas, then season with salt and white pepper to taste. Serve immediately.
