CELERY ROOT PUREE
3 large celery roots
1⁄3 cup extra virgin olive oil
Sea salt and freshly ground black pepper
FRIED ONIONS
1 tablespoon olive oil
1 large onion, thinly sliced

For the celery root puree:
Place about 5 cups water in a large pot fitted with a steamer and a lid. Bring to a boil.

Chop off the roots and peel off the dark skin from the celery roots, being careful to remove all the brown. Cut each celery root into about 12 pieces and place the pieces in the steamer. Steam until very soft when poked with a fork, about 20 minutes.

Transfer the celery root to a food processor. Add the olive oil and puree until smooth. (If you don’t have a food processor, you can use an electric mixer.) Add additional olive oil to achieve the desired consistency. Sprinkle with salt and pepper.

For the onions:
While the celery root is simmering, place the olive oil in a saucepan over medium-high heat. When hot, place the onion slices in the pan. Keep stirring while the onion starts to brown, cooking until the onion is brown and crispy, 7 to 10 minutes. Remove and drain on paper towels.

Serve the
celery root with crispy fried onions on top.

SERVES 4 TO 6

braised red chard

PROTEIN, HEALTHY FATS, VEGETABLES
DETOX, LEVEL 1, LEVEL 2

2 tablespoons olive oil
1 yellow onion, finely diced
2 tablespoons (¼ stick) unsalted butter
¼ cup chicken stock or broth, preferably
homemade
2 bunches red Swiss chard, coarsely chopped
Sea salt and freshly ground black pepper

Place a wok or large skillet over high heat. Add the olive oil and onion, and sauté for 2 to 3 minutes. Turn down the heat to medium and cook for another 7 minutes, or until lightly browned. Add the butter, stock, chard, salt, and pepper and braise for about 15 minutes.

green beans with garlic vinaigrette

HEALTHY FATS, VEGETABLES

1 pound fresh green beans
¼ cup
Garlic Vinaigrette

Steam the beans until tender and still slightly crunchy; don’t overcook. Toss with the vinaigrette and serve.
