1 pound Chinese long beans (or green beans)
4 tablespoons sesame oil
1 tablespoon grated fresh ginger
3 tablespoons soy sauce
Juice of 1 lemon
Freshly ground black pepper

Trim the ends off the long beans

Heat a large sauté pan over high heat. Add 3 tablespoons of the oil, then the beans, and sauté until tender, about 5 minutes. Remove the beans and set aside on a platter.

In the same pan, reduce the heat to low and add the last tablespoon of oil and the ginger. Sauté until golden, about 3 minutes. Add the soy sauce, lemon juice, and pepper. Pour the sauce over the beans and serve.

SERVES 4 TO 6

spicy broccoli

HEALTHY FATS, VEGETABLES

¼ cup grapeseed oil
2 teaspoons toasted sesame oil
6 garlic cloves, minced
1 pound broccoli florets, blanched
2 teaspoons soy sauce
1 teaspoon red pepper flakes

Heat both oils in a large skillet. Add the garlic and sauté for 1 to 2 minutes or until golden brown. Add the broccoli and cook for about 5 minutes, until it is tender but still a little crunchy. Add the soy sauce and continue to cook for 1 minute. Toss to coat the broccoli. Stir in the red pepper flakes and serve.

broccoli rabe with garlic and hot pepper

HEALTHY FATS, VEGETABLES

Kosher salt
1 bunch broccoli rabe
3 tablespoons extra virgin olive oil
2 garlic cloves, thinly sliced
1 teaspoon red pepper flakes
Sea salt and freshly ground black pepper
2 tablespoons fresh lemon juice

In a large saucepan, bring 2 quarts of salted water to a boil.

Wash the broccoli rabe, cut off the bottom stems, and remove any yellow leaves. Cut into 2-inch pieces. Place the broccoli rabe into the boiling water and cook until slightly tender. Drain.

Wipe out the pan and place it back on the stove over medium heat. Add the olive oil. Add the garlic and red pepper flakes. Sauté until the garlic turns light golden brown. Add the broccoli rabe and toss well. Season with salt and pepper to taste, and the lemon juice.
